Fun-In-Learning about Chanukah, 1972
Chanukah is right around the corner, which means the latke wars are coming, the epic battle between Team Apple Sauce and Team Sour Cream.
But my humble jumblrites, may I offer a third and equally delicious alternative that comes with none of the conflict?
Guacamole.
It's got all the savory creaminess of sour cream and the odd flavor combo of apple sauce. Plus, you can piss all your jewish friends off and revel in their disgust!

POTATO LATKES
2.5 lb baking potatoes, russet; ~4 potatoes
2 eggs
1 tsp salt
2 tbsp matzah meal
1 onion (small pieces)
1 tbsp lemon juice (optional)
ground black pepper
extra virgin olive oil or safflower oil for frying (olive oil is more traditional, but some prefer the milder flavor of safflower)
in one bowl, beat egg, lemon juice, matzah meal, salt & pepper.
Grate potatoes, squeeze out extra liquid (in sieve), mix in onions & the egg mixture in large bowl.
heat olive (or safflower) oil: quarter to 1/8 inch in skillet (test if a little potato sizzles)
flatten tbsp of latke
when you see the edges are brown, turn it & fry the other side
place in layers with paper towels between each layer to cool a little
serve with sour cream for dipping (or applesauce I GUESS)

Gonna throw a wrench in the applesauce-or-sour-cream-on-latkes debate because today I tried them with garlic aioli and truffle mayonnaise and you know what? Yes to bougie latkes. Holy shit.
I also had ketchup with them too because fuck it, I'm not going to be precious about it. They're elevated hash browns.
Unpopular Opinion: I don’t understand why everyone ™ is so against ketchup on latkes. Ketchup and fried potatoes is a great combination - why does it change when the potato is in latke form? Is it just considered childish or what?
