This Crispy Apple Kohlrabi Salad is a refreshing and crunchy salad that combines the mild flavor of kohlrabi with the sweetness of apples. The addition of walnuts and feta cheese provides a delightful texture and a touch of creaminess. It's a perfect side dish for any meal.
Ingredients: 2 cups thinly sliced kohlrabi. 1 apple, thinly sliced. 1/4 cup chopped fresh parsley. 1/4 cup chopped walnuts. 1/4 cup crumbled feta cheese. 2 tablespoons lemon juice. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large bowl, combine the thinly sliced kohlrabi, apple slices, chopped parsley, and chopped walnuts. In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to taste. Pour the dressing over the salad and toss to combine, ensuring all ingredients are coated. Sprinkle crumbled feta cheese on top of the salad. Serve immediately and enjoy!
1. Remove the skins from the kohlrabi, then slice into 2cm thick steaks. Season well with salt & pepper.
2. In a frying pan, warm a good glug of olive oil to a medium high heat. Add the steaks, 2 at a time, searing for 3-5 mins on each side until golden brown. Flip & repeat.
3. Add the garlic & butter, then continue to baste until tender & cooked through. You can finish in the oven for 5-10 mins here too if you like.
4. For the romesco, simply add the ingredients to a blender, blitzing until smooth.
5. For the gremolata, coursely chop then mix the nuts & herbs. Add the lemon zest, juice & a splash of olive oil.
6. To serve, spoon the romesco around a plate, top with two of the steaks. Drizzle with gremolata, then enjoy on its own or with a salad & bread.
