For these kids, I really liked @nocandnc's headcanon that Kafka is sterile, so he and Mina would have to adopt. Their children were all orphaned from a kaiju attack when they were very young, so Kafka and Mina did an impromptu adoption of them, creating an "instant family" type situation (except none of the children are related to each other biologically either).
Anyways, just like always, specific info about the kids is below the cut! (I am sorry for all the run on sentences, I spent hours writing this and I didn't have enough energy to proof read it...)
Kenji Hibino
Physical Info:
22 Years Old
5'10"
I am yet to decide if his blue hair is dyed or natural, but the meta reason for his hair color is that it matches Kakfa's blue highlights in kaiju form.
Personality:
Kenji is a very chipper fellow with an extremely high drive. He often surprises people by his unrelentless stamina and diligent work ethic. There are some who are convinced that he is incapable of tiring out. Kenji has always been incredibly passionate about kaiju slaying since he was a little boy, and even before he was adopted into the Hibino family. This shows through his intense training that he embraces with such utter passion it puts some of the hardest working officers to shame.
Outside of his work ethic, Kenji also has a very outgoing and friendly temperament. He is incredibly encouraging and validating to those around him, always insisting that they should go after what they want in life and follow their dreams (very akin to something like a youth sports coach or inspirational speaker).
Out of his siblings, Kenji is the only one who remembers the kaiju attack that left him orphaned at four years old. Even worse, this is one of Kenji's first memories; he can barely even remember his biological family. He doesn't admit it, but even after all these years, it still bothers him. Still, Kenji doesn't want to stay in the past and dwell on bad memories, instead he uses it as motivation to be the best officer he can be and prevent further tragic incidents from ocurring.
Capabilities:
For as long as he could remember, Kenji has aspired to be an Defense Force officer, and he has been training to be one for just as long. Kenji is incredibly strong, fast, agile, has remarkable reflexes, and has a great sense fighting abilities, making him the ideal officer. He applied to the JAKDF right after he graduated college and unsurprisingly passed the exams with flying colors. Even though he is currently a rookie, Kenji is quite successful and praised highly by his superiors.
Kenji's high combat power allows him to neutralize kaiju quite efficiently. His main weapons of choice are firearms. Kenji has excellent marksmanship, working well with both handguns and rifles. He handles the recoil very well and has impressive aim.
Relationship with Kafka and Mina:
Before Kenji was adopted into the Hibino family, he utterly worshipped some of the most prominent members of the JAKDF, including Mina and Kafka. He thought they were the coolest people around and wanted to be just like them when he grew up! When the kaiju attack happened and Kenji lost his whole family to the incident, he was pretty conflicted. His new parents were the people he idolized most which is super awesome, but he was still devastated by the loss of his birth family. That's a lot for anyone to go through, but especially for a boy as young as Kenji at the time. Still, Kafka and Mina were able to help him (likely with the help of a pediatric psychiatrist) and over time they truly started to feel like a family. Even as an adult, Kenji still thinks the world of his parents and believes they are some of the coolest people out there. Kafka and Mina have been very supportive of their son's journey to becoming an officer and are super proud of all he has achieved. Ultimately, Kenji has a loving and encouraging relationship with his parents that has been fostered over time.
Ryu Hibino

He styles his hair in a similar way to his dad's, albeit a tad more modern (It wasn't until after I drew him that I realized his haircut is basically identical to Yuji Itadori's and I must clarify that this was not intentional whatsoever).
Personality:
Ryu is fairly shy individual and prefers to keep to himself whenever possible. Given how nervous people make him, he isn't too fond of them. Unfortunately for him, social interaction is a necessary part of life, so he tries to make due. His social skills aren't terrible by any means, but he he has a habit of being overly polite and formal with people he isn't close with (and the people he is close with is a very small list that mostly consists of his family).
Ryu, despite having very refined skills, has pretty low self esteem and doesn't really believe in himself at all. He tends to focus on the qualities he is lacking in. When it comes to traits he is stronger in, he compares himself to those who are the best of the best in said traits, making him feel even more inferior.
He doesn't remember his life prior to the kaiju attack or even the attack itself as he was only three years old at the time. Still, he knows he was alive long enough to have an established connection to his family. Kenji also claims that he remembers Ryu being more outgoing before the attack and being very friendly with the other young kids in the neighborhood (but Kenji also admits he isn't entirely sure since he has so few memories from back then).
Capabilities:
Ryu is not very strong, fast, agile, or really apt physically whatsoever. Moreover, he holds a passionate hatred for training. However, Ryu is very intelligent and excellent with anything mechanical, making him feel more directed towards engineering. Ryu has a strong disdain for kaiju and still wishes to wipe them off the face of the earth, so he is learning everything he can about the tech created and used by the Defense Force. He even has a internship lined up at the JAKDF after he graduates college. His main aspiration is to significantly improve the suits worn by the officers and to create a weapon from a numbered kaiju that can be used to end all kaiju-kind.
Relationship with Kafka and Mina:
While Ryu doesn't remember the kaiju attack or anything before, it is still clear he has suffered trauma from it. Just like with Kenji, Kafka and Mina did not expect Ryu to adjust right away to his new life after having his old life entirely upended and worked with medical professionals to make the transition easier. However, Ryu took significantly longer than Kenji to accept his new family. Being much more anxious and timid, it was much more difficult for him to accept these new, strange adults as his parents. It was a slow and steady process, but as the years went by, Ryu became closer and closer to his parents to the point of really seeing them as his parents. Now, Ryu considers himself pretty close with his folks. Out of his siblings, he is definitely the one who talks to them the least (and Kafka and Mina really wish he'd open up to them more), but by his standards their relationship is tight knit. He openly talks to them about his ongoing research and projects and the progress of his studies. While he loves both of his parents, Ryu does feel slightly more at ease with his dad due to his more carefree nature.
Emi Hibino

Emi dons a very similar hairstyle to her mom; she even wears the same barrettes as her.
Emi really likes makeup and is particularly fond of blush, so she tends to wear a decent amount of it.
Personality:
Emi is an upbeat and kind individual who always makes sure those around her are cared for, especially those who are more vulnerable or innocent such as the sick and injured, elderly, children, and animals. She often prioritizes others over herself, making sure everyone is taken care of. She also has a tendency to overwork herself and spread herself too thin. She is aware of this, and she tries to avoid burning out, but she can't help herself. When she sees someone in need, she must help out.
Emi was only a baby when the attack that ended her biological family's lives occurred, so all of her memories come from her life with the Hibino's. Despite having no memories of them, Emi has gone out of her way to research her biological family out of curiosity and to honor them, and has even met distant relatives in the process. She has done the same research on her brother's relatives for them, even though they have shown no interest and just want to move on.
Capabilities:
Emi is a huge animal lover and is currently studying to be a veterinarian. Being the diligent worker she is, she progressing quite quickly in her studies and is showing immense promise to be a successful vet. Outside of speedily becoming very learned in veterinary practices, Emi works really well with animals, and they seem to be rather fond of her. She has even been entrusted to care for a tiger cub who she has affectionately named Kabocha. Kabocha is actually a failed kaiju that was created with Bakko's DNA. She was deemed safe enough to be taken into Emi's care since Kabocha took a strong liking to Emi (like most animals) and Emi had prior experience helping to care for Bakko.
Despite not openly expressing any interest to work with/for the JAKDF, Emi has a secret aspiration to find a nonviolent solution to their issues with kaiju. She firmly believes kaiju and humans can coexist. Humanity just needs to focus more on understanding kaiju and their behavior for the purpose of discovering how to make peace with them instead of trying to figure out more ways to kill them. Being in a family of adamant kaiju killers, she doesn't dare utter this hope of hers, but she does think its ironic that she knows they wouldn't like her dream despite her own father technically being a kaiju.
Relationship with Kafka and Mina:
Since Emi was just a baby when she was adopted, to her, her adoptive parents feel no different than her birth parents (or rather, she thinks what she feels towards her parents is no different than how people feel towards their biological parents). Whatever "normal" is, that's how Emi thinks she feels. Kafka and Mina never hid the fast that she was adopted, but Emi never felt that made her less of their daughter than if they were related biologically. Emi absolutely adores both of her parents. While she has a very close relationship with both of them, Emi is slightly closer to her mom. As the only girls in the house, Emi feels like she can confide a bit more in her mom in regards to "girl talk" and the like. They also have a strong love of animals in common. Emi is still very close with her dad, though, and deems him as the parent she can goof around with.
Relationship between the Siblings:
The Hibino siblings all originate from the same neighborhood that was attacked. Kenji and Ryu knew of each other, but weren't exactly friends. Emi, being a baby at the time, didn't know either of them. However, since they've been adopted, they have grown really close to each other. For Ryu, Kenji and Emi are the people he is closest to due to their shared traumatic experience. Ryu feels he can confide in his siblings better than anyone else he knows. Kenji, like with everyone else, is super supportive of his little siblings' endeavors and wants them to be successful. He is always willing to give a word of advice or a bit of encouragement. Emi makes her family a big priority in her life, so regularly keeping in touch with her big brothers is very important to her.

I decided to write this after seeing it being discussed by multiple folks in the community.
What would happen to Kafka if he really did die? I don't think his body could get converted into a weapon for two reasons other than morality. The man was once human and his transformation into a kaiju wasn't normal.
Soshiro already experiences side effects like the mental link when 10 was made into his Number suit. Who knows what would happen with a Numbers Weapon made from Kaiju No. 8? Plus I don't think Tiny will let anyone else handle such power either.
This is what came to mind with the thought of Kafka's death. A new Larval Kaiju would be born from his body. However it doesn't just take the kaiju powers but the man's soul is also a part of it.
Like any Numbers Weapon, Kafka would choose the next host to Kaiju No. 8. The decision falls on him as he is way more familiar with the modern world and much fairer judgment. He doesn't want any future user to flounder like he did in the beginning.
Kafka will guide them with some help from Tiny. Something closer to an actual partnership as he helps their chosen host with the burden of Kaiju No. 8's power. This whole reincarnation would also greatly affect his friends especially those in the Defense Force.
It does take a moment to realize that this isn't just any kaiju but their comrade. How his powers are closer to a generational curse since a new Larva will be born after the prior user dies. Their soul being only added to the collective. Even if Kafka controls the body, the man's fate is made bitterly obvious.
Something that can be more morbid should his new host be someone very close. (Friends or loved ones for those who ship this loveable himbo.) It's their choice in the end as this isn't something he wants to rob anyone unless there is no choice.
