Genius hack.
Never paying $6 for a tiny nub of ginger again
Go buy a piece of organic ginger. Look for the ones with "eyes"—those little green-ish bumps that look like they’re trying to sprout. If it’s from a big-box store, soak it in water overnight. They spray that stuff with growth inhibitors so it stays "pretty" on the shelf (rude).
Cut it into 1-inch chunks. Make sure every piece has at least one "eye." Let them sit on your counter for a day or two to dry out (callus). If you plant them wet, they’ll just rot and your room will smell like a swamp.
Use loose, loamy soil with a bit of compost. Grab a wide pot (ginger grows outward, not down) and bury the chunks about an inch deep, eye-side up.
Light: Indirect sun.
Water: Keep it moist. If you live in a dry apartment, mist it occasionally .
It takes like 8–10 months to fully mature. You’ll know it’s ready when the leaves start turning yellow and dying back.
The "Infinite Ginger" Loop:
When you harvest, save a few pieces with healthy buds and put them right back in the soil. You literally never have to buy it again.

I replaced my old tablet with a new one before going to Europe, because I didn't want to take a full laptop but I knew my elderly tablet wouldn't handle the travel well. I'm using the new one for reading and such, but I didn't want the old one just languishing in a drawer forever, so I bought a pair of wall mounts for it and installed it on one of my kitchen cupboards. It's now my jukebox, podcast player, and recipe book whenever I'm in the kitchen. (I'm waiting on some moldable utility putty to arrive and I'll fix the cord a little more elegantly.)
[ID: A kitchen cabinet over a counter, very 80s style with wood grain trim. Attached to the cabinet door are a pair of plastic "mounting" corners; sitting in the corners is a tablet with the screen lit up, showing a handful of icons including links to my recipe files and an audio player. The tablet's charging cord is plugged into it and currently taped to the surface of the cabinet door inelegantly.]
