A refreshing and satisfying salad packed with healthy fats from salmon and avocado, perfect for a keto-friendly meal.
Ingredients: 2 salmon fillets, cooked and flaked. 2 ripe avocados, diced. 2 cups mixed greens. 1/4 cup cherry tomatoes, halved. 1/4 cup cucumber, diced. 2 tbsp olive oil. 1 tbsp lemon juice. Salt and pepper to taste. Optional: 2 tbsp chopped fresh herbs such as parsley or cilantro.
Instructions: In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and diced avocados. Add the flaked salmon to the salad. Drizzle olive oil and lemon juice over the salad. Season with salt and pepper, and toss gently to combine. Sprinkle with chopped fresh herbs if desired. Serve immediately.
