I picked up a package of black soybean pasta from Ralph's. Grilled up chicken breasts, sauteed mushrooms and mixed it all together with homemade alfredo sauce and one serving of the pasta. HUBBY SAID IT WAS DELICIOUS 😎 I didn’t get to eat any of it due to work at home mom life but hubby said it was so good and “pasta like”. ▫️ I sautéed garlic and mushrooms in butter and then added the zoodles. Once zoodles had cooked a bit, I added the pizza sauce and let it cook for about 5 minutes. These low carb egg noodles are a perfect gluten-free and keto-friendly alternative to traditional pasta. They are easy to make and incredibly versatile, allowing you to enjoy your favorite pasta dishes without the guilt.
Ingredients: 4 large eggs. 4 oz cream cheese, softened. 1/4 cup coconut flour. 1/4 cup grated Parmesan cheese. 1/2 tsp xanthan gum. 1/4 tsp salt.
Instructions: In a bowl, beat the eggs and cream cheese until smooth. Add coconut flour, Parmesan cheese, xanthan gum, and salt. Mix until well combined. Let the dough rest for 5 minutes to allow the coconut flour to absorb moisture. Preheat oven to 375F 190C and line a baking sheet with parchment paper. Spread the dough thinly and evenly on the parchment paper. Bake for 8-10 minutes, or until set and lightly golden. Remove from the oven and let it cool for a few minutes. Using a pizza cutter or sharp knife, cut the dough into thin strips to resemble noodles. Serve with your favorite keto-friendly pasta sauce or toss with olive oil and herbs.

This Keto Low Carb Pasta substitutes traditional pasta with spiralized zucchini, offering a delicious and healthy alternative. It's quick, easy to make, and perfect for those following a low-carb or ketogenic diet.
Ingredients: 4 large zucchinis, spiralized. 2 tablespoons olive oil. 2 cloves garlic, minced. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh basil leaves for garnish optional.
Instructions: Warm up a big pan with olive oil over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. Toss the spiralized zucchini in the garlic-infused oil after adding it to the pan. Stir the zucchini every once in a while for two to three minutes, or until it's soft but still has a little crunch. Take the pan off the heat and add the grated Parmesan cheese on top of the zucchini pasta. Add salt and pepper to taste, and then toss everything together. If you want, you can add fresh basil leaves as a garnish. Serve right away and enjoy!
