Ingredients: 4 cups sliced peaches fresh or frozen. 1/4 cup granulated erythritol or monk fruit sweetener. 1 teaspoon lemon juice. 1 teaspoon vanilla extract. 1 cup almond flour. 1/4 cup coconut flour. 1/3 cup granulated erythritol or monk fruit sweetener. 1 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted. 2 large eggs. 1/4 cup unsweetened almond milk. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon optional.
Instructions: Preheat the oven to 350F 175C. Grease a baking dish. In a bowl, mix sliced peaches, 1/4 cup sweetener, lemon juice, and 1 teaspoon vanilla extract. Spread evenly in the prepared baking dish. In another bowl, combine almond flour, coconut flour, 1/3 cup sweetener, baking powder, and salt. Stir in melted butter, eggs, almond milk, and 1 teaspoon vanilla extract until well combined. Spoon the batter over the peaches in the baking dish, spreading it evenly.
