Kale has many varieties including dino, curly, red, and others. I like to call it angry lettuce since it does have a little kick to it. Rub the leaves down with lemon juice before salads for a milder flavor or texture. Using baby kale is another good alternative. I love using it in my smoothies with other greens like spinach, collard greens, or chard to get a different nutrient profile and mix things up as well. Kale is like a broom since it sweeps out toxins, helps to push bulk out, and is about 45% protein per calorie and is higher than beef (25.8% protein/calorie), chicken (23% protein/calorie), or eggs (12% protein/calorie). Granted, kale is low in calories so more will be needed to equal the total protein of other foods, but it's one of the most nutrient dense foods on the planet and only about 25 grams of protein is needed for an adult each day according to the World Health Organization.
