This Easy Vegan Jaffa Cake Dessert is a delightful twist on the classic Jaffa cake, with a moist chocolate base, tangy orange marmalade filling, and refreshing citrus garnish. It's perfect for satisfying your sweet tooth while staying vegan-friendly!
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup cocoa powder. 1 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsweetened applesauce. 1/4 cup vegetable oil. 1/2 cup orange juice. 1 tbsp orange zest. 1/4 cup dark chocolate chips. 1/4 cup orange marmalade. Fresh orange slices for garnish. Fresh mint leaves for garnish.
Instructions: Warm the oven up to 350F 175C and grease a muffin tin. Add the cocoa powder, baking powder, baking soda, and salt to a bowl and mix them all together. Add the orange juice, orange zest, applesauce, and vegetable oil to the cereal. Mix everything together well. Add the dark chocolate chips and mix well. Put half of the batter into each muffin cup. Put it in the oven and bake for 15 to 18 minutes, or until a toothpick stuck in the middle comes out clean. For five minutes, let the cakes cool in the pan. Then, move them to a wire rack to cool completely. Put some orange marmalade on top of each cake after it has cooled. Before serving, top with fresh orange slices and mint leaves.
