My mom and I have been testing recipes in search of one that tastes just like my Nonna's Italian cake. This one is pretty dang close. We found the recipe on Pinterest and all you need is flour, sugar, vegetable oil, milk( I substituted for almond milk), eggs, and baking powder. For a bit of extra flavor we added lemon zest. Funny story. A kind old Italian woman gave me a "cake" for Christmas. I had never tried it before. So Ben and I opened it up and we almost finished the entire the whole thing in one night. Today I was in the store and saw another cake like the one she gave me. Of course I bought it and brought it home. My point: This woman is poor and has hardly has nothing. But she gives cakes away as gifts during the holiday season. She gives what she does have. And the gift she gave brought so much joy. Now every year forward we will have to get one of these cakes and I will forever remember the women's sincere thoughtfulness.
