Lockdown baking is off to an experimental start with rockmelon and coconut cupcakes with cream cheese icing. . We got a random fruit and veg box that included a rockmelon that neither of us eat so thanks to Google and some ingredient swaps these cupcakes were born. They are surprisingly good!
