We are still on mum’s cooking today. The Braised Pork & Mushroom are leftovers from last night. Newly added dishes are the braised hard-boiled egg 🥚 and Kang Kong (空心菜) stir-fry. The water spinach 🌿 (Ipomoea aquatica) is cooked with minced pork and garlic.

Only the two of us are having dinner and here are the Takeaway Meals we had. The first box has a piece of black pepper pork chop, crispy sweet ikan bilis (dried anchovies) & peanuts with sweet & sour cubes of battered pork. The next box came with stir-fried kang kong (water spinach), same ikan bilis & peanuts with a whole herbal chicken leg over white rice.
Mum’s very own Crispy Fried Chicken using boneless drumstick and thigh meat. It is accompanied by sweet and tangy ketchup sauce in which she added sugar and a dash of soya sauce to it.
For the vegetable dish, it is tender shoots of Kang Kong aka water spinach or water morning glory, stir-fried with ikan bilis (dried anchovies). From what I have read, this plant is mostly cultivated and consumed in Asia.
That is it, Dinner is just a simple two dishes affair. A meat protein and a plant based fibre with the usual carbohydrate of white rice.

My colleague told me the KFC Goldspice Chicken 🍗 is delicious; so good that she ate it four times in a week! While browsing the internet, I came across a promotion for it, 8 pieces of chicken for only S$8.80 (16th – 18th Feb 2021). It comes with 4 pieces each of Goldspice Chicken and Hot & Crispy Tenders.
Hot and crispy chicken 🍗 is given a dusting of salted egg, sweet basil and herbs blend to transform it into the Goldspice Chicken. On the first bite, the skin is crispy and savoury with a salted egg aftertaste that did not try to overpower my taste buds which is a good sign. You can also detect the presence of curry leaves and sweet basil 🌿 plus the little heat from the chillies. Overall, I would rate the taste profile as yummy and the promotional price just make it more worthwhile.

A two-dish home-cooked dinner starting off with stir-fried tender Kang Kong aka Water Morning Glory/Water Spinach (Ipomoea aquatica) with ikan bilis (dried anchovies) and fried Emperor Red Snapper Fillet 🐟 (红狮/Lutjanus sebae) dusted with flour. For the carbs, there is a small scoop of steamed butternut squash (over here we just called it pumpkin) white rice.
