So, this happened. We spotted them at the @beckmannsbakery stand at the farmers market and I couldn't resist (almond croissants are my kryptonite). This thing was HUGE! Tofu scramble and hash browns for brunch today! And after that I went for a run. I hadn’t been running basically all winter and boyfriend is pretty new to running so I’ve restarted C25K with him. About to start week 3!
I made vegan fried rice tonight with some leftover veggies in my fridge. 💕 The “eggs” are just tofu I crumbled up and stir fried.

I wish I could make this nice of a breakfast every day. Tofu scramble, sweet potato hash, grapes, and a small slice of homemade sourdough bread with vegan butter.

This photo doesn’t do this meal justice, the tofu was sooo good. I think I’ve found the secret to making good tofu: You coat it in spices and let it sit in the fridge for a full day. I used some seasoning that’s supposed to be for burgers and a bunch of red pepper flakes. Stir fried with onions, green pepper, and a little kale.
