This Super Easy Yummy Hot Pepper Jelly recipe combines the sweetness of red bell peppers with a kick of heat from hot peppers. It's the perfect balance of flavors and makes a delightful addition to your favorite dishes.
Ingredients: 4 cups of finely chopped red bell peppers. 1 cup of finely chopped hot peppers jalapeos, habaneros, or your choice. 1 cup of apple cider vinegar. 1 package 1.75 oz of fruit pectin. 5 cups of granulated sugar.
Instructions: Prepare canning jars and lids by sterilizing them in boiling water or running them through the dishwasher. In a large pot, combine the finely chopped red bell peppers, hot peppers, and apple cider vinegar. Stir in the fruit pectin until well mixed. Bring the mixture to a boil over high heat, stirring constantly. Once it's boiling, add in the granulated sugar all at once and stir well to combine. Continue to cook the mixture, stirring frequently, until it reaches a rolling boil that can't be stirred down. This usually takes about 5-7 minutes. Remove the pot from the heat and skim off any foam from the top. Ladle the hot pepper jelly into the prepared canning jars, leaving about 1/4-inch headspace at the top. Wipe the jar rims clean, place lids on top, and screw on the bands until they are fingertip tight. Process the jars in a boiling water bath for 10 minutes to ensure they are properly sealed. Remove the jars from the water bath and allow them to cool completely on a clean towel or cooling rack. Once cool, check the seals by pressing down on the center of each lid. If it doesn't pop back, the jar is sealed. Label your jars with the date and store them in a cool, dark place. Your hot pepper jelly will be ready to enjoy in a few weeks!
