Ingredients: 2 cups gluten-free all-purpose flour. 1/2 cup almond flour. 1/4 cup coconut sugar. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/4 tsp ground cloves. 1/4 tsp salt. 1 packet 2 1/4 tsp instant yeast. 3/4 cup warm almond milk. 1/4 cup melted coconut oil. 1/4 cup unsweetened applesauce. 1/2 cup raisins or currants. 1/4 cup powdered sugar for the cross.
Instructions: Add coconut sugar, cinnamon, nutmeg, cloves, salt, gluten-free all-purpose flour, and instant yeast to a large bowl. Use a whisk to mix the ingredients together. Mix the dry ingredients with the melted coconut oil, warm almond milk, and plain applesauce. Mix until you get a dough. Add the raisins or currants and mix them in until they are spread out evenly in the dough. Let the dough rise in a warm place for about an hour, or until it has doubled in size. Cover the bowl with a clean towel. Warm the oven up to 375F 190C and put parchment paper on a baking sheet. Cut the dough into 10 equal pieces, and roll each piece into a ball. Leave space between each bun as you place the balls on the baking sheet that has been prepared. Sugar powder and a little water should be mixed together in a small bowl to make a thick paste. Put the paste in a piping bag or a plastic bag that has had a corner cut off. On top of each bun, pipe a cross shape. The buns should be baked in a hot oven for twenty to twenty-five minutes, or until they are golden brown and done. Take it out of the oven and let it cool down a bit before you serve it.
