Hotch is incredibly attuned to your anxiety from the very beginning
The profiler in him make him notice the small signs: the way your shoulders tense, how your breathing changes, or when you start fidgeting.
He never calls you out on it.
Instead, he pulls you aside gently (or waits until you're alone) and asks if "you're okay" or "what's going on in that head of yours"
And it's never condescending or judgemental. His tone is always soft and guiding, trying to figure out the best plan of action as you start to spiral.
I have what might be a strange question, but what do you think hotch does after resigning from the bau? He's 50-ish so he's a while off retirement and I know they said he wants to be a full time dad to jack but I can't see him as a stay at home dad unless he was doing like remote work, so what are your thoughts on it?
I honestly can't see him not working either. But Hotch would've been just shy of his 51st birthday when he left the BAU (based on episode release) and according to the FBI website you can retire with your federal pension and health insurance after 20 years of service at the age of 50. Which would've been 1996 for him and kind of tracks with him joining the Seattle field office in the mid-late 90's
And special agents have a mandatory retirement age of 57. So I do believe that he was aware that he would be forced to retire soon anyway (not that Rossi cares about the rules) and then started to pick up hobbies that he could do in retirement.
Maybe he fell in love with running or cycling during his triathlon training and is doing that more often now that he has time to.
I could also see him get really into cooking and reading.
Work wise, he might consult on a few cases, after Scratch dies, as a lawyer/prosecutor in the small town that he likely continues to live in.
I hope that makes sense, because I feel like I yapped a little too much 😅

I don't think there are foods Hotch wouldn't eat, but that being said I believe that his diet is pretty bland and boring.
Oatmeal and orange juice for breakfast if he has time -> otherwise just a cup of coffee. Either a packed sandwich or vending machine sandwich for lunch, and stuff like meat, potatoes and steamed veggies for dinner.
Or at least any similar variation, can be rice and veggies, soup, pasta with tomato sauce.
There's no creativity in his diet and he only kind of "branches out" when he's away on cases and goes out with the team for dinner or if they're in some tiny town in the middle of nowhere and his only option is whatever fastfood place they have.

I feel like Hotch would wait quite a while before "finally" having sex in a new relationship. It's not so much him needing the relationship to develope, but a lot to do with his job pulling him away when its about to happen and your schedules clashing a bit when he's home.
I do think that he also would take your reaction to Jack into consideration before even considering having sex with a new partner, because he needs to know that you're fully onboard with his son. That being said, I think you'll have sex before you get to meet Jack.
