When it comes to sharpening I use a sharpening action that I made, but there are some really good one on Tumblr you can download to use HERE and HERE
Another thing I do is use the camera raw filter in photoshop to edit the gifs as well THIS is a good tutorial but I also do use the noise reduction sometime depending on the quality of the video I am making the gif from but also depending how I have coloured it (that tutorial also is for sharpening as well)
