Herb crusted chicken, red onion mash & garlicky green beans.
Healthy, tasty and low in calories, with super juicy chicken. Serves 2. 565 cals per serving.Â
3/4 medium sized potatoesÂ
1 bunch flat leaf parsleyÂ
Step 1- Put a kettle on to boil. Chop your potatoes into medium sized chunks, place in a saucepan, fill so the potatoes are covered with boiling water. Boil until the potatoes are soft, drain and set aside for later.Â
Step 2- In a bowl, put your bread crumbs, 1tbsp olive oil. Chop your parsley ( stalks as well) finely, then add to the breadcrumbs with a sprinkle of pepper. Give it all a mix together. Place your chicken on a baking tray, and spoon over the top of the breasts with the mayo. Then sprinkle over your breadcrumb mixture on top of the mayo. Place the chicken in the oven on a high heat, till the chicken is thoroughly cooked ( will no longer be pink in the middle) .
Step 3- Trim and peel your onion. Slice into medium sized slices, drizzle some oil in a pan, and add the onion. Cook until the onion is nicely browned and soft. Once cooked, add to your drained potatoes, with a knob of butter and a splash of milk, then mash all together.Â
Step 4- Trim your green beans and In the same saucepan you used for the onion, add another drizzle of oil. Then add your beans. Cook for 3-4 mins, then add in your garlic and water, place a lid on top and let the beans steam for another 3-4 mins, until they are soft. Once soft, drain away any excess water and add in the vinegar and 1tbsp of olive oil, give it all a stir together.Â
Step 5- Your ready to serve. Divide the beans and mash between plates. Then place your chicken between plates as well. Enjoy.Â
