Grilled Salsa Verde Pepper Jack Chicken Recipe
Allow these colorful and good for you skewers to take their place on the grill. You can bring these veggie kabobs to a BBQ party or eat them for a tasty meatless meal.
Ingredients: 2 bell peppers, cut into chunks. 1 red onion, cut into chunks. 1 zucchini, sliced. 1 yellow squash, sliced. 8 cherry tomatoes. 8 button mushrooms. 1/4 cup olive oil. 2 tablespoons balsamic vinegar. 2 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: Salt and pepper should be mixed with olive oil, balsamic vinegar, garlic, dried oregano, and salt in a bowl. This will make the marinade. Alternate the bell peppers, red onion, zucchini, yellow squash, cherry tomatoes, and mushrooms on the wooden skewers that have been soaked. Put the veggie kabobs that have been put together in a shallow dish and pour the marinade over them. Turn them over a few times during the 30 minutes of marinating. Warm up the grill over medium-high heat. The veggie kabobs should be cooked on the grill for 10 to 12 minutes, turning them over every so often, until the vegetables are soft and slightly charred. Enjoy these bright and healthy skewers while they're still hot!
