Ingredients: 2 cups baby spinach leaves. 1 cup kale leaves, chopped. 1/2 cucumber, thinly sliced. 1/2 avocado, diced. 1/4 cup cherry tomatoes, halved. 1/4 cup broccoli florets. 1/4 cup green bell pepper, diced. 1/4 cup red onion, thinly sliced. 2 tablespoons pumpkin seeds. 2 tablespoons feta cheese, crumbled.
Instructions: In a large salad bowl, combine the baby spinach and chopped kale. Add the cucumber, avocado, cherry tomatoes, broccoli, green bell pepper, and red onion to the bowl. Sprinkle pumpkin seeds and feta cheese on top of the salad ingredients. Toss the salad gently to combine all the ingredients. Serve immediately or refrigerate until ready to serve.
