Maybe some big daddy’s went with the little sisters because they genuinely care for there charges. Those that do make it out tend to go into peaceful crafts like art, music, cooking, crafts, gardening and the like. They also have a bit of split in the fact that 50% are beating the shit out of the gumgums and the others are also fawning over Jim because baby.
The Little Sisters didn't just escape, they were rescued. But of course a Big Daddy doesn't allow anything near their charges... unfortunately, most were killed during the rescue.
