Ingredients: 1 bottle of Le Brun de Neuville Grand Vintage Brut Champagne 2008. 1 cup Arborio rice. 1/2 cup dry white wine. 3 cups seafood or vegetable broth. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1/2 lb assorted seafood shrimp, scallops, mussels, etc.. 1/4 cup grated Parmesan cheese. 2 tbsp butter. 1 tbsp olive oil. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Bring the vegetable or seafood broth to a simmer in a saucepan. Then turn down the heat to low to keep it warm. Put the butter and olive oil in a different large skillet and heat them over medium-low heat. It will take about three minutes of cooking after adding the chopped onion and garlic. Put the Arborio rice in the pan and toast it for about two minutes while stirring it all the time. Add the white wine and cook until the rice soaks it up. Add a little bit of the warm broth at a time to the rice while stirring it often and waiting for each addition to be absorbed before adding more. For another 18 to 20 minutes, or until the rice is creamy and al dente, keep cooking. While the risotto is cooking, quickly saut the different kinds of seafood in a different pan for about two to three minutes, or until they are just cooked through. Add pepper and salt to taste. Take the risotto off the heat when it's done and grate in the Parmesan cheese. Serve the seafood sauted on top of the risotto with fresh parsley on top.
