Remind them that in Europe, where he comes from, waiters working in restaurants have by law the right to proper living wages, and any tips they get from costumers are just an extra, not something they rely on to make ends meet - unlike in the US, where waiters are paid so little they are essentially beggars.
Well, in the US Gordon makes his waiters beg like any American boss would because he can get away with it; and in his British restaurants he pays them proper wages because the law forces him to.
