These fish tacos are a delightful blend of crispy, flavorful fish and fresh, vibrant toppings. The cornmeal crust adds a satisfying crunch, making them a gluten-free favorite for summer gatherings.
Ingredients: 1 pound white fish fillets such as cod or tilapia. 1/2 cup cornmeal. 1 teaspoon chili powder. 1/2 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. 2 tablespoons olive oil. 12 corn tortillas. 1 cup shredded cabbage. 1 avocado, sliced. 1/4 cup chopped fresh cilantro. Lime wedges, for serving.
Instructions: Put the cornmeal, chili powder, cumin, paprika, salt, and pepper in a shallow dish and mix them together. Coat the fish fillets all over with the cornmeal mixture. Put olive oil in a big skillet and heat it over medium-high heat. For 3 to 4 minutes on each side, or until golden brown and done, remove from heat. You can warm corn tortillas in the microwave or a dry pan. Each tortilla should have a piece of cooked fish on it. Then, add shredded cabbage, avocado slices, and chopped cilantro on top of the fish.
