These Glazed Japanese Chicken Meatball Skewers are a delicious fusion of flavors with a sweet and savory glaze. Perfect for grilling or broiling, they make a fantastic appetizer or main dish.
Ingredients: 500g ground chicken. 1/4 cup breadcrumbs. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup green onions, finely chopped. 1/4 cup soy sauce. 2 tablespoons sake Japanese rice wine. 2 tablespoons mirin. 2 tablespoons sugar. 1 tablespoon grated fresh ginger. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: In a large mixing bowl, combine ground chicken, breadcrumbs, chopped onion, minced garlic, and chopped green onions. In a separate bowl, mix together soy sauce, sake, mirin, sugar, and grated ginger to make the glaze. Add half of the glaze mixture to the chicken mixture and season with salt and pepper. Mix everything until well combined. Preheat your grill or broiler to medium-high heat. Take small portions of the chicken mixture and shape them into meatballs. Thread them onto the soaked wooden skewers. Place the skewers on the grill or under the broiler and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice char. During the last few minutes of cooking, brush the remaining glaze mixture onto the meatballs, allowing it to caramelize and create a glossy finish. Once cooked, remove the skewers from the grill or broiler. Serve the Glazed Japanese Chicken Meatball Skewers hot, garnished with extra chopped green onions if desired.
