These gingerbread cookies are super soft, full of warm spices, and perfect for the holiday season. They are easy to make and will fill your home with the delightful aroma of ginger and cinnamon.
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 cup molasses. 2 large eggs. 1 teaspoon vanilla extract. 4 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 tablespoon ground ginger. 1 tablespoon ground cinnamon. 1/2 teaspoon ground cloves. 1/2 teaspoon ground nutmeg. 1/4 teaspoon ground allspice. Additional granulated sugar for rolling.
Instructions: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the molasses, eggs, and vanilla extract. Mix until well combined. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and ground allspice. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Cover the dough and chill it in the refrigerator for at least 2 hours or overnight. Preheat your oven to 350F 175C and line baking sheets with parchment paper. Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in additional granulated sugar until fully coated. Place the coated dough balls on the prepared baking sheets, leaving some space between each cookie. Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely. Once cooled, store the cookies in an airtight container.
