In Georg-Paul Henn's "Betrugs-Lexikon", published in 1721, provides examples of legal disputes illustrating double standards. A total of 21 "disadvantages" of millers are listed.
The Strasbourg Collection of Riddles from 1505 says: "Why doesn't the stork build a nest in the mill?" Answer: "Because he's afraid the miller will steal his eggs."
They also complained about the plight of the millers, but we can talk about the "relative well-being" of the millers compared to the rest of the urban and rural population.
For example, there is a proverb in Mecklenburg that you can't get rich with work, otherwise a donkey would be richer than a miller. Even Rübezahl advises how to compensate for financial losses by making fun of the miller. In particular, he turns into a donkey and allows the miller to sell himself.

So... was people lousing each other once common practice? The human version of chimpanzee grooming?
The parallels here are interesting! The motif at the start, daughter asks for X thing and father gets it for her but has to promise her to a terrifying beast in exchange, is common enough in fairy tales, but then here you have the daughter later taking on the same role as the beast, winning a spouse by trading away some form of strange or magical possession.
