Ingredients: 2 cups gluten-free rice. 4 cloves garlic, minced. 3 cups water. 1 tablespoon olive oil. Salt to taste. Fresh parsley for garnish optional.
Instructions: Run cold water over the gluten-free rice until the water is clear. Put olive oil in a saucepan and heat it over medium-low heat. Add the minced garlic and cook for about one to two minutes, until the garlic smells good. Rinse the rice and add it to the pan. Toast it for two more minutes, stirring it around a lot. Add water and salt to taste. Bring to a boil, then turn down the heat, cover, and let it simmer for 18 to 20 minutes, or until the rice is soft and the water is gone.
