Ingredients: 4 bone-in pork chops. 1.5 lbs potatoes, peeled and diced. 4 cloves garlic, minced. 1 onion, chopped. 1 cup chicken broth. 1/2 cup milk. 1/4 cup butter. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Season pork chops with salt and pepper, then place them in the bottom of the slow cooker. Add diced potatoes, minced garlic, and chopped onion on top of the pork chops. Pour chicken broth over the pork chops and potatoes. Cover and cook on low for 6-8 hours or high for 3-4 hours, until pork chops are tender and potatoes are soft. About 30 minutes before serving, mash the potatoes in the slow cooker. Add milk, butter, salt, and pepper, and stir until well combined. Serve pork chops with garlic mashed potatoes, garnished with chopped parsley.
