These crispy garlic herb potatoes are a perfect side dish for any meal. They are crispy on the outside and creamy on the inside with a delightful garlic and herb flavor.
Ingredients: 4 large potatoes. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste.
Instructions: Warm the oven up to 425F 220C. Peel the potatoes and cut them into rounds that are 1/2 inch thick. Put minced garlic, dried thyme and rosemary, salt, and pepper in a bowl. Also add olive oil. Toss the potato slices in the herb mix so that they are covered all over. Place potatoes on a baking sheet that has been lined with parchment paper so that they are all at once. Bake the potatoes for 25 to 30 minutes, or until the outside is golden brown and crispy and the inside is soft. Enjoy while hot!
