A summer salad with strong flavors that comes from fresh mixed greens, sweet cherry tomatoes, crunchy cucumber, and the sourness of feta cheese and Kalamata olives. It's all put together with a zesty balsamic vinaigrette dressing. On a sunny day, this salad is a great way to enjoy a light and filling lunch in the garden.
Ingredients: 2 cups mixed greens. 1 cup cherry tomatoes, halved. 1/2 cucumber, sliced. 1/4 red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 1/4 cup Kalamata olives, pitted. 2 tablespoons balsamic vinaigrette dressing. Salt and pepper to taste.
Instructions: Put the mixed greens, cherry tomatoes, cucumber, and red onion in a large salad bowl. Pour the balsamic vinaigrette dressing over the salad and toss it around to cover everything. Add the chopped feta cheese and Kalamata olives to the salad. Add pepper and salt to taste. Serve right away as a flavorful and refreshing summer salad.

Before the rain, there were parties to be had. And desserts! Mixed berry parfaits with whipped crème fraîche and a meringue “cap”. #gardenlunch #dessert #meringue #eatclean @seletbeurre https://www.instagram.com/p/CivIRKDBC2e/?igshid=NGJjMDIxMWI=
My corn is ready! This is my first year growing sweet corn and I'm thrilled I successfully grew some. There's more still ripening, but these first few ears are ready for eating. I might try steaming them in their husks in the microwave. Looks like it's corn on the cob and fried okra for lunch. #gardenlunch #homegrowncorn #hopetherearenttoomanybugs https://www.instagram.com/p/CSpWpx3pkoS/?utm_medium=tumblr
Fresh herbs from my garden to go into a pot of cauliflower and potato soup (also from my garden). 🥰😋🥣 In my childhood, I would have been accused of showing off. But honestly, I'm just sharing my joy. I hope you know that. This social media thing can be hard. We compare ourselves so often with others and judge ourselves harshly for how we think we measure up (or fail to). I didn't know I could grow food like this. I found gardening as a means of surviving life's hardships, especially the last couple of years. The unexpected bounty of this year's garden is amazing on several levels. It's a healing balm for my heart and nervous system, as well as nourishment for my body (because you can't get better nutrition than organic food, freshly picked, plus it's as local as you can get). I hope you find ways to feed yourself and share that joy with others, freely and without worry. #gardenlunch #gardenherbs https://www.instagram.com/p/CQrPArynAxZ/?utm_medium=tumblr

Today's lunch. Our family eats charcoal grilled meat twice a week in the garden. Nourish and get well. And sleep. #virusshutout #repelling #immunity #gardenlunch https://www.instagram.com/p/B_tlXjkFren/?igshid=1huzsvcjwggtl
