GALETTE DES ROIS I'm always supporting tradition, especially when it comes along with delicious dishes and pastries! The Epiphany is celebrated in early January, and the only thing I know about it is that we are used to eat a Galette des Rois (in South of France they have a Brioche des rois, which is also delicious) For 2 galettes you will need 750g pure butter puff pastry dough 1 egg Creme patissiere (vanilla custard) 2 eggs 40g sugar 25g corn flour 400g milk vanilla beans Warm the milk with the vanilla in a pan. Whisk the eggs, sugar and corn flour, and pour the warm milk on it. Whisk again, and pour back to the pan. Cook while whisking until you get a cream texture. Film and let cool down. Almond cream: 250g almond flour 170g sugar 180g soften butter 4 eggs almond extract (a few drops only) Simply mix the ingredients until you get a smooth homogeneous batter. When the vanilla custard is cooled down, mix it with the almond cream: tadaaaaaaaaaaa you have a frangipane!!! Cut your dough in 4 large discs. On 2 discs, place a generous (very generous) layer of filling, and cover with a second disc of dough. Seal carefully so the filling won't run out during baking. Place in the fridge for 30 minutes, then, with a knife, make some decors to make it prettier (not mandatory at all) and brush with an egg. Place again in the fridge for 15 minutes, then egg brush it again.
