Ingredients: 4 ripe bananas. 1 cup granulated sugar. 1/4 cup lemon juice. 1/2 teaspoon cinnamon. 1/4 teaspoon nutmeg. Pinch of salt.
Instructions: Peel and mash the ripe bananas in a bowl. In a saucepan, combine the mashed bananas, granulated sugar, lemon juice, cinnamon, nutmeg, and a pinch of salt. Cook over medium heat, stirring frequently, until the mixture thickens and reaches a jam-like consistency about 20-25 minutes. Remove from heat and let it cool slightly. Transfer the banana jam to sterilized jars and seal them. Allow the jam to cool completely before storing it in the refrigerator.
