Ingredients: 2 1/4 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 2 tablespoons sour cream. 1 teaspoon vanilla extract. For Fresh Strawberry Icing:. 1 cup fresh strawberries, hulled and pureed. 2 cups powdered sugar. 1/2 teaspoon vanilla extract.
Instructions: Mix the flour, baking powder, and salt together in a bowl with a whisk. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. Add the egg, sour cream, and vanilla extract and mix them in well. Mix the dry ingredients into the wet ingredients one at a time until a soft dough forms. Make two discs out of the dough, wrap each one in plastic wrap, and put them in the fridge for at least one to two hours. Warm the oven up to 350F 175C and put parchment paper on baking sheets. On a floured surface, roll out one piece of dough to about 1/4-inch thickness. Cut out the shapes you want with cookie cutters and place them on the baking sheets that have been prepared. After the oven is hot, bake for 8 to 10 minutes, or until the edges are just beginning to turn golden. For a few minutes, let the cookies cool on the baking sheets. Then, move them to wire racks to cool completely. Pure the strawberries, add the powdered sugar, and mix until smooth. This makes the fresh strawberry icing. Put some fresh strawberry icing on top of each cookie once they are completely cool. You can either spread it out or drizzle it on. Let the icing harden on the cookies before you serve them or put them away.
