These delightful sugar cookie pizzas are a fun and creative dessert that combines the flavors of sugar cookies, cream cheese, and fresh fruits. They're perfect for parties, gatherings, or whenever you want to impress with a unique dessert!
Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 2 teaspoons baking powder. 3 cups all-purpose flour. 1/4 teaspoon salt. 1/2 cup cream cheese, softened. 1/4 cup powdered sugar. Assorted fresh fruits e.g., strawberries, blueberries, kiwi, etc.. 1/4 cup apricot preserves or fruit glaze.
Instructions: Preheat the oven to 350F 175C. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. In a separate bowl, whisk together the baking powder, flour, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Divide the dough into smaller portions and roll each portion into a ball. On a lightly floured surface, flatten each dough ball into a mini pizza crust shape. Place the flattened dough on a baking sheet lined with parchment paper. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. Remove the cookie crusts from the oven and allow them to cool completely on a wire rack. In a bowl, mix the cream cheese and powdered sugar until smooth and creamy. Spread a thin layer of the cream cheese mixture onto each cooled cookie crust. Arrange assorted fresh fruits on top of the cream cheese layer. In a small saucepan, gently heat the apricot preserves or fruit glaze until it becomes more liquid. Brush the warmed preserves or glaze over the fruits to create a glossy finish. Allow the cookie pizzas to set for a few minutes before serving. Slice into wedges and enjoy!
