Ingredients: 1 gluten-free pie crust. 3 ripe pears, peeled, cored, and sliced. 2 ripe persimmons, peeled and sliced. 1 vanilla bean, seeds scraped. 1/2 cup granulated sugar. 1/4 cup brown sugar. 2 tablespoons cornstarch. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1 tablespoon lemon juice. 1 tablespoon butter or dairy-free alternative.
Instructions: Preheat your oven to 350F 175C. In a large mixing bowl, combine the sliced pears, persimmons, vanilla bean seeds, granulated sugar, brown sugar, cornstarch, ground cinnamon, and salt. Mix until the fruit is well coated. Stir in the lemon juice to enhance the flavors. Place the gluten-free pie crust into a pie dish. Pour the fruit mixture into the prepared pie crust and spread it evenly. Dot the top of the filling with small pieces of butter or dairy-free alternative to help with browning. Bake in the preheated oven for 40-45 minutes, or until the filling is bubbling, and the crust is golden brown. Remove the pie from the oven and let it cool before slicing. Serve slices of your gluten-free vanilla bean pear persimmon pie with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
