These Shrimp Po'Boy Tacos taste like a traditional Po'Boy sandwich but are easier to eat because they are tacos. Something tasty to eat is fried shrimp with a tangy sauce and fresh toppings.
Ingredients: 1 lb large shrimp, peeled and deveined. 1 cup buttermilk. 1 cup cornmeal. 1 cup all-purpose flour. 1 tsp salt. 1/2 tsp paprika. 1/2 tsp garlic powder. 1/4 tsp cayenne pepper. Vegetable oil for frying. 8 small taco-sized flour tortillas. Shredded lettuce. Sliced tomatoes. Sliced pickles. Remoulade sauce mayonnaise, mustard, hot sauce, pickle juice, and spices. Lemon wedges for serving.
Instructions: In a bowl, combine the buttermilk, salt, paprika, garlic powder, and cayenne pepper to create a marinade. Add the peeled and deveined shrimp to the marinade, making sure they are fully coated. Cover and refrigerate for 30 minutes. In a separate bowl, mix the cornmeal and all-purpose flour. Heat vegetable oil in a deep frying pan or pot to 350F 175C. Remove the shrimp from the marinade, allowing excess to drip off, and then coat them in the cornmeal and flour mixture. Fry the shrimp in batches for about 2-3 minutes per batch, or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Warm the flour tortillas in a dry skillet or microwave. To assemble the tacos, place shredded lettuce, sliced tomatoes, and sliced pickles on each tortilla. Top with the fried shrimp. Drizzle remoulade sauce over the shrimp, and serve the tacos with lemon wedges on the side. Enjoy your delicious Shrimp Po'Boy Tacos!
