Ingredients: 1 cup powdered sugar. 1/2 cup almond flour. 2 tablespoons unsweetened cocoa powder. 2 teaspoons espresso powder. 2 large egg whites, at room temperature. 1/4 cup granulated sugar. 1/2 teaspoon vanilla extract. Pinch of salt. 1/2 cup semi-sweet chocolate chips, melted.
Instructions: Warm the oven up to 300F 150C and put parchment paper on a baking sheet. Put the almond flour, cocoa powder, espresso powder, and powdered sugar in a bowl and mix them together using a sieve. Throw away any big pieces that are still in the sifter. Using an electric mixer on medium speed, beat the egg whites in a different bowl until they start to foam. Slowly add the granulated sugar while beating the mixture. Turn the mixer up to high speed and whip until stiff, shiny peaks form. Add the salt and vanilla extract and mix them in slowly until they are all mixed in. Carefully fold three groups of the dry ingredients into the egg whites. It should be easy to spread out and flow like lava. Fill a piping bag with a round tip with the batter. Place small rounds, about an inch apart, on the baking sheet that has been prepared. A few taps on the counter will get rid of any air bubbles in the baking sheet. It will take about 20 to 30 minutes for the macaroons to form a thin crust on top. Do this at room temperature. The macaroons should be baked in a hot oven for 12 to 15 minutes, or until they are set. Leave them on the baking sheet to cool all the way down. Place a small amount of melted chocolate on the flat side of half of the macaroons once they are cool. Add the rest of the macaroons on top to make sandwiches.
