Vegan meal prep! Forks Over Knives inspired Indian-Spiced Cauliflower and Potato Casserole and Thai Rice (I made them lentil) Salad Bowls. Feelings before: Not extremely hungry physically but definitely feeling the fact I haven’t ate yet ( I wake up late on weekends but usually have to wake up at 4 and have breakfast like 4:45). Emotionally feeling pretty okay, been working toward this moment so have some anticipation going
Ultimately Ate: 2 oranges, 1 Almond Butter, Apple Butter, Banana Wrap
Feelings After; I feel okay. I feel satisfied, but not sure if I’m quite satiated? But it’s like right now it doesn’t feel worth looking for another orange or some other fruit. The oranges were /fantastic/ by the way. I got kind of worried when I noticed they were seedless, but nothing i can find online says this is due to significant processing, mainly that they’re slightly lower in Fiber or something, and I can’t find anything specific on forks over knives about it.
I also noticed the apple butter wasn’t “unsweetened” entirely. I did check the labels when I was shopping, but I wasn’t clear on my shopping list on some points (this shopping list was very long, several drafts in, And took me hours, so my final draft was unfortunately missing some things typo-esque like that). I still found an apple butter that didn’t have added fructose corn syrup, no oils, and it’s stats fat and sodium wise were okay. Since the wrap called for raisins and I skipped those, I’m hoping it evens out.
The wrap itself wasn’t /too/ bland, but it was far from the rich one I could have made with similar highly processed and sweetened ingredients. I know my tastes will adjust, but the oranges were far more flavorful.
Of course, since I’m gonna be at home today and most of tomorrow, my satiation at any given meal isn’t going to need that much tweaking, as the only thing between me and eating is preparing a meal or snack, and I can always grab a piece of fruit if the things I’m preparing aren’t ready like today, since it’s my day I’m going to batch cook. When I go back to work, I’m really going to have to figure out what I need to eat for breakfast, snack, and lunch to last me till I get home (I know snacks aren’t entirely recommended but lunch is seven hours after I eat breakfast, so i feel like it’s fair to need something to hold me off a bit.) it’s probably going to require some heavy attention to what I’m actually saying in these Food Diary entries.
