Forced winter rhubarb makes the most beautiful delicate pink jam and is perfect in my Rhubarb & Gin Jam. No filter on this lovely forced rhubarb! I pop mine in the oven with the zest and juice of one orange and a big drizzle of honey. Cover with foil and cook for 45 mins. It will make its own juicy syrup. Once it is cooked I keep it in the fridge and eat for breakfast with coconut yogurt, stir into muffin recipes, or top with a quick gf crumble in a ramekin to make a little pudding.
