Ingredients: 1 cup creamy peanut butter. 2 large eggs. 1/2 cup honey or maple syrup. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup gluten-free chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine peanut butter, eggs, honey or maple syrup, vanilla extract, baking soda, and salt. Mix until smooth. Fold in the chocolate chips gently into the batter. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Bake for 12-15 minutes, or until the tops are set and a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature!
