Rosemary Flageolets
These buttery and fragrant Rosemary Flageolets make a beautiful side to both fish or meat, notably lamb!
Ingredients (serves 2):
2 1/2 cups frozen flageolet beans
1 tablespoon unsalted butter
1/2 tablespoon olive oil
1 fluffy sprig fresh rosemary
a jolly good pinch fleur de sel or sea salt flakes
Cook flageolet beans in a large pot of salted boiling water, over medium-high heat until tender, about 15 minutes.
Once cooked, drain flageolets, and plunge them in a bowl of ice water. When cooled, drain thoroughly.
Melt butter with olive oil in a large, deep skillet.
Remove rosemary leaves from the stalk, and chop them finely.
Once the butter is just foaming, add half of the chopped rosemary to the skillet, and fry, a couple of minutes.
Stir in flageolets, coating in fat and herbs, and cook, shaking the skillet often, about 5 minutes more.
Season with fleur de sel, and stir in remaining chopped rosemary. Cook, another minute.
Serve Rosemary Flageolets hot, as a side to Citrus Bream Fillets or Roast Lamb.
