Ingredients: 1 cup dry green lentils. 1 onion, diced. 2 carrots, chopped. 4 cups vegetable broth. 1 teaspoon curry powder.
Instructions: Rinse the lentils thoroughly under cold water. In a large pot, saut the diced onion until translucent. Add the chopped carrots and saut for another 2 minutes. Pour in the vegetable broth and bring to a boil. Add the rinsed lentils and curry powder to the pot. Reduce heat, cover, and simmer for 25-30 minutes, or until lentils are tender. Serve hot and enjoy!
