Used discarded rye starter for Russianrye.
100% Rye flour. It's quite heavy and has nutty deep flavour.
フィーデング時に廃棄したスターターを再利用して100%ライ麦パンを焼いてみました。
スターター:250g
水:225g
ライ麦:300g
藻塩:7.2g
ずっしり重たく、ライ麦の香り高いコクのあるパンに仕上がりました。
初めての自作サワードウ。
今回は、強力粉とライ麦全粒粉を混ぜたライトライです。
丸型とオーバル型の2つを作ってみました。
クラムとクラストの食感は良く、目指しているものに近かったのですが、見た目と味に課題がたくさん残りました。
理想のサワードウに近づけるように精進します。

Most of you don't know that one of my many passions is catching yeast. My ex-husband and my daughters are all well aware of this thing about me.
Now that I am working with some permaculture students in Monterey, Mexico I am back at it. These guys have shown a big interest in baking so I introduced them to sourdough or Masa madre, in Spanish.
As a result I was inspired to create a blog about catching yeast and making your first sourdough loaves.
So, if you love fermentation you will love catching yeast too.
