hardneck has a stem right down the middle, having a dedicated neck. softneck has all the cloves pointing up and layered like an onion, cosnidering it soft.
remember sourcing seeds even garlic bulbs as local as possible helps ensure they'll grow better next year. many produce farmers would be delighted if you offered to buy garlic in bulk from them instead of purchasing growing bulbs online. it's the same delicious shit.
