Ingredients: 6 eggs. 2 tablespoons butter or ghee. 1/4 cup shredded cheddar cheese. Salt and pepper to taste. Chopped chives for garnish optional.
Instructions: Put the eggs in a bowl and beat them with a whisk until they are smooth. Melt the butter or ghee in a pan over medium heat. Add the beaten eggs to the pan and stir them around a few times to make them start to set. Add the shredded cheddar cheese on top of the eggs and keep cooking, stirring, until the cheese melts and the eggs reach the consistency you want. Add pepper and salt to taste. If you want, add chopped chives as a garnish before serving.
