He's seen a lot of villain layers and he thinks at least some of them had good taste. He likes things to be a little old fashioned but with a modern element to them. He's limited in what he can do in the Embassy but he's been there longer than the current ambassador and when there was an 'interim' period he absolutely did all he could to renovate his apartment up to his tastes. Which admittedly are actually quietly bland. Black, brown/gold and white throughout.
His personal items are mostly locked away from view as he continues to try and keep his true identity hidden. In a way he feels most comfortable in a home that is devoid of most things personal because in his mind he will still eventually be able to return to Scotland one day. Additionally it protects his cover in case someone does break into the apartment and starts rummaging, though the limited personality of his space might raise alarm bells for anyone on the look out for a man in witness protection.
He loves his gadgets still and the most legally obtainable ones happen to be in the kitchen, which is the room he enjoys most. His admiration for cooking keeps him happy while he's home alone and preparing nice and good quality meals for himself is some expression of self care even if he'll never see it that way. If he can cook, he might as well do it well.
A small study is part of his apartment where he's contactable at night for MI6 purposes, in the desk is a laptop that's hidden in a compartment, a button on a side table also opens the door to a walk in closet size gun room filled with weapons from QBranch he's still holding onto (see stolen), arguably as part of a duty to protect the blasted bastard ambassador.
