The salads traditional white color is alluded to the fair skin of Circassian women. We turn this traditionally pale salad upside down, instead of breast meat we use dark meat . The broth of the chicken is emulsified with toasted bread and nuts to give the salad its characteristic texture and flavor. We fold in pickled currants and candied almonds for texture as well as a bright pop. But what really makes the salad is fresh garlic. What an under appreciated ingredient. Monday blues got me going back to the 7 course feast I had this weekend with @joraperuviancuisine and @eatfeastly - The two new additions to the previous 5 courses were: Sopa Criolla, creme fraiche, smoked cashews, smoked walnuts, poached quail egg, basil, basil oil, tomato aji panka broth. Pescado con Torrejita a la Chiclayana, Catch of the Day, Peruvian corn croquette, criolla salad, cilantro acevichado sauce, tomato chip. - Chef @RodrigoFernandini also made a ton of minute changes to the texture and flavors of the other courses to keep improving and perfecting his dishes.
