A delicious and nutritious quinoa vegetable soup that is 21 Day Fix and Clean Eating approved. Packed with wholesome ingredients, this soup is a perfect addition to your healthy meal plan.
Ingredients: 1 cup quinoa, rinsed. 4 cups vegetable broth. 1 onion, diced. 2 carrots, sliced. 2 celery stalks, chopped. 1 bell pepper, diced. 2 cloves garlic, minced. 1 can 15 oz diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste. 4 cups spinach, chopped. Juice of 1 lemon.
Instructions: In a large pot, combine quinoa and vegetable broth. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Add onion, carrots, celery, bell pepper, and garlic. Simmer for an additional 10 minutes. Stir in diced tomatoes, thyme, oregano, salt, and pepper. Cook for 5 more minutes. Add chopped spinach and lemon juice. Cook until spinach is wilted. Serve hot and enjoy!
