This Chipotle Sweet Potato Noodle Salad with Roasted Corn is full of healthy, colorful, and tasty foods. It has black beans, roasted corn, bell peppers, avocado, and a spicy chipotle lime dressing. Ingredients: 2 medium sweet potatoes, spiralized into noodles. 1 tablespoon olive oil. Salt and pepper to taste. 1 cup corn kernels, fresh or frozen. 1 can 15 ounces black beans, drained and rinsed. 1 red bell pepper, diced. 1/4 cup chopped fresh cilantro. 2 green onions, thinly sliced. 1 avocado, diced. 1/4 cup crumbled feta cheese optional. 1/4 cup chipotle lime dressing. Lime wedges, for serving.
Instructions: Preheat the oven to 400F 200C. Toss sweet potato noodles with olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 15-20 minutes or until tender and slightly crispy. Meanwhile, in a skillet over medium heat, roast the corn kernels until they start to char, about 5-7 minutes. Set aside. In a large bowl, combine roasted sweet potato noodles, black beans, diced red bell pepper, chopped cilantro, sliced green onions, diced avocado, and roasted corn. Drizzle chipotle lime dressing over the salad and toss gently to combine. Top with crumbled feta cheese if desired. Serve immediately with lime wedges on the side.
